Two kinds of Oil are produced:
- Extra-virgin olive oil made only with LECCINO monocultivar
- Extra-virgin olive oil made with a BLEND of olives ( Leccino, Pendolino, Maurino, Leccio del corno)
To guarantee these products all stages of harvesting and processing are personally and lovingly followed by the producer.
The olive harvesting is brought forward so as to obtain a more intense oil with organoleptic and sensory characteristics stable throughtout time.
The olives are processed in a continuous cycle mill within 24 hours of picking.
Once prodeuced, the Oil is then sealed in stainless steel tanks at optimum temperature and is officially identified for certification.
Each lot undergoes chemical analysis in a specialised laboratory as well as organoleptic and sensory testing by recognized experts.
Finally the Oil is filtered and bottled under nitrogen in 250 and 500 ml bottles with anti-refilled cap.
It is due of this characteristics that the Oil has obtained ORGANIC certification by BIOS Certification Board.
